Our Steaks We purchase our steaks from Bryan Flannery because he is one of the most discerning meat purveyors we know. He is obsessed with the purity, care and quality of his beef. Our prime steaks are the best quality, prime, corn-fed beef that hails from Iowa, Kansas and Nebraska. Corn-fed cattle, specifically Angus and Hereford cattle, produces the best marbling. Marbling is fat, yes, but it is a different kind of fat than the greasy stuff that we remove from the outside of steaks and other foods. Marbling appears in the interior of the steak. It is the determination of flavor. It is the indication of a prime steak, the highest grade accorded by the USDA. Bryan purchases the highest grade of prime beef. One hundred head of cattle must be inspected to acquire one steer that grades prime. Bryan dry ages the steak for 30-45 days to further develop the flavor and to naturally tenderize the meat.
